Las categorías europeas de los vinos espumosos, de acuerdo al dulzor, son las que vemos abajo, por lo tanto este » Secco» tampoco es tan seco. Esperemos que los productores se acerquen más a la parte baja del rango para diferenciar esta novedad de manera clara.

Los Asti usan la uva moscato bianco (moscatel de grano menudo, muscat blanc á petit grains) y el nuevo Asti Secco se hace de la misma forma que los anteriores (método Charmat o Martinotti) pero con una fermentación más larga que los lleva a tener menos azúcar residual y más alcohol.

-Asti Spumante Dolce: Son muy populares y un caso de éxito comercial en el mercado local, liderados por Riccadonna pero ya han aparecido muchas marcas como Martini, Cinzano, Zonin, Canti, Tosti, Filipetti, Gancia, Marchesi di Barolo, Costa Bricco. Son espumoso (6 atmosferas, como el Champagne por ejemplo) y tienen entre 4.5% y 6.5% de alcohol.
-Moscato d’Asti: es un vino dulce frizzante (1.8 atmósferas), de muy bajo nivel alcohólico (entre 4.5% y 6.5%) que tiene algunos exclentes ejemplares como La Morandina que importaba hace unos años Hugo Plevisani. También encontramos hoy de las bodegas: Pio Cesare, La Spinetta, Marchesi di Barolo, Montalbera, Sobrero.
